What it is
Whole broccoli heads with tender stems and fresh leaves. May include small side shoots or a few edible flowers — tender, sweet and part of the bunch.

Flavour
Clean, mild and slightly sweet with a fresh crunch. Picked young for tighter florets, better texture and fuller flavour.

How to use it
Steam or boil lightly and finish with butter or olive oil
Roast with oil, salt and garlic until crisp on the edges
Stir-fry quickly for a fresh, crunchy bite
